Culinary students from Saint Louis University's nutrition and dietetics program are staging a takeover of the cafe at the Contemporary Art Museum St. Louis (CAM).
The event will be held from 11 a.m. to 1:30 p.m. on Wednesday, March 7.
The spring menu is ala carte and includes:
- Popcorn and pickles - $4
- Oyster mushroom tempura, schug, toum - $6
- Ravioli, spinach, salt roasted beet, ricotta salata, herb - $10
- White fish salad plate, pickles, microgreen salad, garnishes, rye - $11
- Berries, kinogoshi, sesame crumble - $7
The event is open to the public. CAM is located at 3750 Washington Blvd in Grand Center.
This is part of a series of meals prepared by culinary track students in their senior capstone class where they research, develop and execute a concept from start to finish throughout the semester.
SLU’s nutrition and dietetics program is one of a few in the nation that allow students to become both a registered dietitian nutritionist and a certified chef.
